When should the bar be set up?

At least 30 minutes prior to the ceremony, so the bartenders should arrive about 90 minutes prior.

Here's why: your guests will arrive up to 30 minutes prior and the bar is right by the entrance. Moving boxes in and out is not the way to greet your guests. Also, it's not possible to do any setup during the ceremony as any setup noises would be heard in the ceremony space.
